The DCM Breeze™ Cracker-Winnower is an economical, all-in-one unit designed with the artisan chocolate maker in mind. With its small footprint, adjustable cracking system, and solid stainless construction, DCM Breeze processes raw androasted cocoa beans at an average rate of 40-50 kg/hour. Breeze™ quietly & efficiently processes beans of all sizes after only a single pass; no pre-sorting or manual post-processing is needed. When you combine DCM’s advanced engineering process with Breeze™’s superior-build quality, the result is very little dust and fewer shell fragments in the nibs. And due to the lack of fines, there is low loss of nibs and cocoa butter in the winnowed shells.

To calculate and to understand efficiency rates, we selected beans from several origins and hand-peeled them. We sampled 50 grams of roasted beans from Bolivia, Nicaragua, and Dominican Republic for each trial. The average husk yield from hand-peeling was 7 grams. It is a very simple experiment and you can also do it to understand your nib to husk ratio. Since these beans were carefully hand-sorted, the efficiency is approximated at 100%. Compact and fully automated, the DCM Breeze cracks and winnows whole cocoa beans at a rate of 40-50kg/hour. Processing times may vary. A vibrating high-efficiency motor allows for a “hands-free” operation of the machine by ensuring that beans and nibs flow freely through the machine.
DCM Breeze accommodates beans of all sizes, including flats, so there is no need to sort before processing.
