The stones are an essential part of the chocolate refiner because their shearing action breaks down the chocolate particles, and particle size determines mouthfeel in the finished product. The stones in our machines are made of natural granite, so some color variation is to be expected.
Please kindly make sure you select the right type of roller stones for your holder. The stainless holders use a 10 mm shaft whereas the Plastic stone holders use an 8 mm shaft.
