This unusual recipe is a surprise in appearance and flavor. Bold and distinctive, these bars combine the sweetness of white chocolate with the savory notes of black sesame. A treat on its own, or paired with sea salt and nori flakes. Try to believe!

▻▷ | 170g | 1 ⅓ cup | 17% | Coconut Milk Powder |
▻▷ | 200g | 1 ⅓ cup | 20% | Powdered Black Sesame |
▻▷ | 1 | - | - | Pinch of salt |
Directions for making Black sesame White chocolate:
- Gently melt the cocoa butter in a pan or in the microwave, making sure not to exceed 160°F / 70°C. Once the butter has melted, add it into your Refiner.
- Slowly add the granulated sugar, ½ cup at a time. Be sure to allow the sugar to be fully incorporated before adding more.
- Add the Coconut milk powder and let refine for about 3h. If necessary, gently increase the temperature using a blow dryer or a heat gun (while never exceeding 140°F/60°C).
- Once the white chocolate appears smooth and fluid, add the Powdered Black Sesame, ¼ cup at a time, allowing it to fully incorporate before adding more.
- Add the salt and process for about 6 hours. and check if you are pleased with the consistency.
- Once you are happy with the texture of your Black Sesame White Chocolate you can remove the chocolate from the Premier.
- Either temper right away or allow it to solidify in sheets or small blocks and set aside for later use.
Storage:Up to 6 months in a cool, well-ventilated place in an airtight container.
