
Ingredients
▻▷ | 40g | ⅔ cup | Shredded unsweetened coconut |
▻▷ | 90g | 1 cup | Old-fashioned oats |
▻▷ | 125g | ½ cup | Creamy peanut butter |
▻▷ | 40g | 3 tbsp | Ground flaxseeds |
▻▷ | 60g | ½ cup | Dried cherries |
▻▷ | 70g | ½ cup | Sunflower seeds |
▻▷ | 85g | ¼ cup | Honey |
▻▷ | 30ml | 2 tbsp | Water (optional) |
Directions:
- In a frying pan,toast coconut on medium heat for 1 minute stirring constantly.
- Combine all ingredients in a large mixing bowl except for the water;
- Cover and refrigerate for 30 minutes;
- If the mixture is too dry to work into small balls, add the water;
- Roll into small, equal sized balls, about the size of a cherry.
Yield: 20 bites
Storage: up to 1 week in the fridge in an airtight container or freeze them and defrost as needed.
