DCM BREEZE CRACKER WINNOWER™
The DCM Breeze Cracker-Winnower is an economical, all-in-one unit designed with the artisan chocolate maker in mind. Cracking and winnowing beans is one of the most labor-intensive steps in chocolate making, it has a very large financial impact on day to day operations. Our goal at DCM was to build a machine that would meet the following criteria:

With its small footprint, adjustable cracking system, and solid stainless construction, DCM Breeze processes raw and roasted cocoa beans at an average rate of 40 kg/hour*. Breeze quietly & efficiently processes beans of all sizes after only a single pass; no pre-sorting or manual post-processing is needed.
When you combine DCM’s advanced engineering process with Breeze’s superior-build quality, the result is very little dust and fewer shell fragments in the nibs. And due to the lack of fines, there is low loss of nibs and cocoa butter in the winnowed shells.
