The lid is an essential part of the machine during the conching stage. In the early stages of grinding, it will prevent chocolate from splattering the work area. Depending upon the aromatic profile of the nibs used, the lid can be kept on or removed. For profiles that are quite robust, it may be recommended to leave the lid off to help disperse bitter/acidic compounds. For more delicate profiles, leaving the lid on will help preserve more subtle and volatile aromas.
