Like a summertime dessert, this Peaches and Cream bar is wonderfully sweet, with a zing of juicy peach and fresh vanilla to tie the flavors together.

 

Ingredients:

Directions for making Peaches and Cream Chocolate :

  1. Gently melt the cocoa butter in a pan or in the microwave, making sure not to exceed 160°F / 70°C. Once the butter has melted, add it into your Refiner.
  2. Slowly add the granulated sugar, ½ cup at a time. Be sure to allow the sugar to fully incorporate before adding more.
  3. Add the full-fat milk powder and let refine for about 3h. If necessary, gently increase the temperature using a blow dryer or a heat gun (while never exceeding 140°F/60°C).
  4. Once the white chocolate appears smooth and fluid, add the freeze-dry peach powder, ¼ cup at a time, allowing it to fully incorporate before adding more. Process for about 6 hours. and check if you are pleased with the consistency.
  5. Once you are pleased with the consistency of your chocolate, you can add the vanilla. Cut the pod lengthwise and scrape out the seeds with a butter knife or the back of a spoon, and add to the mixture. Allow to refine for another 30 minutes with the lid on to preserve the precious aromas of the fresh vanilla.
  6. Once the vanilla is fully mixed, you can remove the chocolate from the Refiner. Either temper right away or allow it to solidify in sheets or small blocks and set aside for later use.

Storage:Up to 6 months in a cool, well-ventilated place in an airtight container.


Pro Tips:

If your Freeze-Dry Fruit Powder clumps.

Freeze dry fruit powders tend to absorb humidity and clump up easily.

If this happens to your fruit powder, place it in a blender or a food processor until powdery again. Use this powder immediately without exposing it to the humidity in the air. If necessary you can compensate for the excess moisture by adding an additional 2% cocoa butter to your recipe.

Flavor development

This recipe is very rich in delicate aromas, and as the chocolate ages, the different flavors will beautifully combine as they settle. Vanilla especially, will not be very noticeable during the first week after refining, but will slowly emerge, peaking at around 1 month after production.
