Freeze dry fruit powders tend to absorb humidity and clump up easily.
If this happens to your fruit powder, place it in a blender or a food processor until powdery again. Use this powder immediately without exposing it to the humidity in the air. If necessary you can compensate for the excess moisture by adding an additional 2% cocoa butter to your recipe.
Flavor development
This recipe is very rich in delicate aromas, and as the chocolate ages, the different flavors will beautifully combine as they settle. Vanilla especially, will not be very noticeable during the first week after refining, but will slowly emerge, peaking at around 1 month after production.
