Small and full of flavor, blueberries bring zing and color to any recipe.

This unusual, naturally vegan white chocolate is perfect to bring an unexpected twist to your ganaches and flavored bars. Perfect to cover cookies and dry fruits!

 

Ingredients:

Directions for making Peaches and Cream Chocolate :

  1. Gently melt the cocoa butter in a pan or in the microwave, making sure not to exceed 160°F / 70°C. Once the butter has melted, add it into your Refiner.
  2. Slowly add the granulated sugar, ½ cup at a time. Be sure to allow the sugar to fully incorporate before adding more.
  3. Once the cocoa butter and sugar mixture appears smooth and fluid, add the Coconut Milk Powder, ¼ cup at a time, allowing it to fully incorporate before adding more. Process for about 4 hours.
  4. Once the vegan white chocolate appears smooth, start adding the Freeze-Dry Blueberry powder, ¼ cup at a time, allowing it to fully incorporate before adding more. Process for another 20h.
  5. Once you are pleased with the consistency and flavor, you can remove the chocolate from the Refiner. Either temper right away or allow it to solidify in sheets or small blocks and set aside for later use.

Storage:Up to 6 months in a cool, well-ventilated place in an airtight container.


Pro Tips:

If your Freeze-Dry Fruit Powder clumps.

Freeze dry fruit powders tend to absorb humidity and clump up easily.

If this happens to your fruit powder, place it in a blender or a food processor until powdery again. Use this powder immediately without exposing it to the humidity in the air. If necessary you can compensate for the excess moisture by adding an additional 2% cocoa butter to your recipe.

If you want to use regular milk powder.

You can substitute the Coconut Milk Powder with classic, full fat, milk powder. This will make a delicious chocolate with a flavour that resembles the one of Blueberry yogurt.
