This unusual recipe is a surprise in appearance and flavor. Bold and distinctive, these bars combine the sweetness of white chocolate with the savory notes of black sesame. A treat on its own, or paired with sea salt and nori flakes. Try to believe!

This unusual, naturally vegan white chocolate is perfect to bring an unexpected twist to your ganaches and flavored bars. Perfect to cover cookies and dry fruits!

 

Ingredients:

Directions for making Peaches and Cream Chocolate :

  1. Gently melt the cocoa butter in a pan or in the microwave, making sure not to exceed 160°F / 70°C. Once the butter has melted, add it into your Refiner.
  2. Slowly add the granulated sugar, ½ cup at a time. Be sure to allow the sugar to fully incorporate before adding more.
  3. Add the full-fat milk powder and let refine for about 3h. If necessary, gently increase the temperature using a blow dryer or a heat gun (while never exceeding 140°F/60°C).
  4. Once the white chocolate appears smooth and fluid, add the Powdered Black Sesame, ¼ cup at a time, allowing it to fully incorporate before adding more.
  5. Add the salt and process for about 6 hours. and check if you are pleased with the consistency.
  6. Once you are happy with the texture of your Black Sesame White Chocolate you can remove the chocolate from the Premier.
  7. Either temper right away or allow it to solidify in sheets or small blocks and set aside for later use.

Storage:Up to 6 months in a cool, well-ventilated place in an airtight container.
